Over at Jeni’s Web-Wedding Shower this month (click the button for details and to join), we’re having a food party.  After all, we would be remiss if we shared all manner of advice with the bride-to-be but neglected to share how we win the hearts of our men with food.

Because I love, LOVE, LOVE mexican food, I shall share this with you:

Chipotle Shrimp Taco with Avocada Salsa Verde .  I’m not sure if I can adequately describe how delicious these ingredients are together.  Makes me want to cry.  This recipe is from foodnetwork.com, but if there is a La Carreta anywhere near you, you simply MUST try their version of this!  RUN!  NOW!  Go try it!  They have it as an appetizer as well as an entree.

The next recipe is simple.

Or meal if you add grilled chicken.  Either way, I recommend that you heed the following advice when making this un-named dish which I shall call Yellow Rice with Rotel from this point on.  Use mild Rotel.  That is, unless you are of the fire-breathing dragon type.  I love spicy food.  However, for some reason this dish is hot even with the mild Rotel.  But if you’re feeling daring go ahead and try the original.

Second, use cilantro sparingly.  Otherwise you may end up with that familiar soapy aftertaste that many mexican restaurant salsas have.  Did you know that there is actually a website for haters of cilantro?  That’s right!  Check it out at ihatecilantro.com.

Sorry about the cilantro side road I took.  OH NO!  I just thought of something.  You might hate cilantro.
